Gf + Low Carb Red Velvet quick bread!

Its January..which means I know a lot of you may be trying to pry yourself away from sugar after over indulging in December. So I figured I would post a few sugar free options this month and next so that you can still have something sweet and delicious even if you are trying to eat less sugar. This recipe is especially festive for Valentines day which is right around the corner!

This low carb/ keto friendly + gluten free quick bread is really easy to throw together! I recommend using alluose as your sugar free granulated sugar for the best flavor possible. Xylitol & Erythritol tend to have a cooling effect/after taste that I think takes away from the baked goods flavor.

If you are looking for a healthy sweet treat perfectly festive for the month of February look no further. This low carb/ keto friendly + gluten free quick bread is really easy to throw together to help tame sugar cravings! Ingredients

Quick bread
  • 4 tbsp (60 ml) mild oil or melted butter
  • ⅓ cup (75 g) water
  • ¾ cup (159 g) keto granulated sugar
  • 4 large eggs
  • 2¼ cups (261 g) blanched almond flour
  • 2 tsp (9 g) double-acting baking powder
  • ¼ tsp Himalayan salt
  • 1 tsp vinegar or lemon juice
  • 1 cup (168 g) keto-friendly chocolate chips
  • 1 tbsp (5 g) dark cocoa powder
  • 4 tsp (24 ml) red food coloring
Optional Topping
  • Whipped Cream cheese or whipped cream (or a sugar free cream cheese frosting)
  • 1 cup sliced berries
  • Shaved dark chocolate

Instructions

  1. Preheat the oven to 350°F. Line a 9 x 5–inch loaf pan with parchment paper.
  2. Combine all the ingredients in a large bowl and whisk until smooth. Pour into the prepared pan. Bake for 40 to 50 minutes, until a toothpick comes out clean and the bread feels set when you shake the pan.
  3. If you wish you can top with Whipped Cream, Whipped cream cheese or a Cream Cheese Frosting, fresh sliced berries and shaved dark chocolate. (Note: there's a keto cream cheese frosting in my book- the ultimate keto cookbook.)
  4. Serve at any temperature. Store in a sealed bag or container for up to 1 week.

Notes

Substitution Notes:

• To make these dairy free, use oil instead of butter and use 

dairy-free chocolate chips.

• To make these Paleo, swap out the sugar for coconut palm 

sugar or granulated maple sugar. Use dairy-free chocolate 

chips.
