I have been on a serious boba tea kick lately( also known as Milk Tea or Bubble tea). I have loved it for YEARS but unfortunately I developed an allergy to Dairy and have learned that Sugar just doesn’t need to be part of my life. I don’t feel my best after eating it. And so.. Boba tea drifted out of my life as I no longer was able to order it anywhere.

While writing The Ultimate Keto Cookbook I was able to get a really firm handle on how to use sugar free sweeteners to actually taste like real sugar. I cant stand icy tasting sugar alcohols and avoid them at all cost these days.. but when I discovered Sukrin Golds Syrup it was a game changer. No after taste, no stomach upset. Pure Magic. Combine it with a little stevia and book.. we have a sweetness that is balanced and delicious without the bloodsugar spikes.

I also learned how to swap real syrup and sugar free back and forth so if SF is not your cup of bubble tea..don’t you worry I have got you covered.

I like to use full fat oat milk in my boba tea to make it dairy free but you truly can use ANY milk or cream of choice

When you combine chai flavor and apple you end up with a little bit of a star anise flavor vibe! If thats not your cup of tea then I would just stick with the chai tea alone!

Before we get to the recipe, a quick note on the sugar-free honey. In order to keep this recipe keto and low-carb, I use sugar-free honey in it. I have been testing out many different brands trying to find the best ones to use and so far these ones are my go to:

The Nature’s Hollow brand can cause a little bit of digestive upset for some people, but not everyone. The other three are really gentle on your stomach. All of the brands will work great in this recipe. You may use sugar free honey OR maple syrup for this recipe.

Most websites I have found recommend that you eat your boba within 4 hours of making it. As it cools itll begin to get hard on the inside and will no longer have that lovely chewy texture. While I do agree with this- I have also found that if you warm the boba back up even after being in the fridge for a day or two it goes right back to being chewy. Its not QUITE as good as the original texture but its still enjoyable. I just throw it in the microwave in a cup for 30-60 seconds and its good to go and ready for another drink.
