Gf + Vegan Apple Fritter Streusel Bread

FLUFFY quickbread loaded up with cinnamon apples and layers of streusel. Does it get any more festive than that? Apple fritter everything seems to be the food trend for fall 2021..so I had to jump on that train myself and create this beautiful bread.

Make a loaf and keep it on the counter for you and your family to eat! Its so delicious and only gains more moisture with the passing days. You can store it room temperature wrapped up in foil for 5-6 days.

While I love customizing flour blends - my goal is to work towards simpler easier quick recipes. You will be seeing more all purpose flour blends in my recipes.

King Arthur Measure for Measure flour blend has become one of my favorites to work with. If you are unable to get your hands on that specific flour another cup for cup blend will work. (Regular all purpose flour works too!)

Its important that I note that Gluten Free All purpose flours are not the same as cup for cup. They don’t contain gums and to thicken the bread batter.

EGG FREE (Making the recipe vegan!)

Lets talk aquafaba! It’s absolutely magical.

This is the first time I have been able to make a grain free baked good fluffy without eggs. All thanks to the aquafaba. Its adds a ton of air and stability to baked goods just like eggs.

What is aquafaba? In short.. BEAN JUICE.

Its just the liquid from a can of garbanzo beans and when you whip it- it behaves just like egg whites! Its wild to see it froth like crazy in the bowl. Don’t worry you cant taste it at all in baked goods either.

So, if you make the recipe using the aquafaba option- be sure to beat it on high for at least 5-6 minutes! If you skip that step your coffee cake will be dense.

As a general rule I use 2 ounces of aquafaba per one large egg! So this recipe needs 4 ounces.

This is very straight forward- use the dairy free or vegan options in the ingredient list.

Notes:

  • For best / exact results please use the provided gram measurements.
  • This recipe can be made using regular all purpose flour (with gluten) just be sure to use the gram measurements.
  • To make the bread dairy free use dairy free butter in the streusel.
  • Other gluten free cup for cup flour blends should work as well. Just be sure they are cup for cup and not just called an all purpose blend. There is a difference.
  • For the oil- vegetable oil can of course be used. Other options are Avocado Oil, Melted Coconut oil (make sure its not hot or it will precook the eggs). Or Melted Butter or ghee (again make sure it is not hot.)
