Gf + Df Chocolate Crinkle Kiss Cookies
Last week I had the idea to stick a chocolate kiss into a red velvet crinkle cookie and was blown away by how good that little idea turned out!! So naturally a classic chocolate version needed to happen too! These cookies are so tender with just the right amount if sweetness. I shared them with friends and everyone raved! They are so quick to make too.
The cool thing about this recipe is that the kiss is optional. If you just want the classic round cake crinkle cookie you can skip the kiss. If you do want the kiss however you can stick In just about any flavor of kisses because what doesn’t taste good with a chocolate cookie? We did an assortment of dark chocolate , white chocolate and hugs (all homemade!)
You will notice I listed these as Dairy Free. Hershey kisses are NOT dairy free. Sooo..
We create dairy free kisses too (you will find them posted in the club recipe section too). All they require is a little mold on amazon & any brand of dairy free chocolate. Easy peasy.
We used all 3 dairy free kiss variations in these cookies just for fun- but feel free to use just one if you wish :)
The cake mix is Dairy Free too. I had a few people message me saying they did not buy it because the box said it had dairy- and I sent then a photo of my box- and needless to say we were confused. We have come to the conclusion that pillsbury updated their mix recipe. Formerly it must have had dairy- but now it does not. Ive purchased easily 20 boxes of it. (No really. I have!) In cookie recipes it works exactly the same as gluten filled cookies. Ive figured out how to sub it in and have things turn out almost every time when Im creating something new. Plus as an added bonus it allows me to remove a whole bunch of ingredients from my recipe - and lower the ingredient count to just 4-6 ingredients every time.
Recipe tips & tricks:
Can you remove the eggs?
I woudn’t recommend it.. not unless you have the skills and time on your hands to try different things out.
Can you sub the king arthur baking gluten free cake mix or other cake mixes? MAYBE! Normally I would say no but I have found crinkles to be a pretty flexible and forgiving recipe so I feel like this is a safer recipe to experiment with.
Can you sub in other flours? No. The cake mix has sugar, salt, vanilla, baking powder/soda & a blend of flours. I’m able to simplify the recipes down to 5 ingredients because of that. No flour alone will perform the same.
I used gram measurements. Why?
Gluten baking can be seriously hit or miss if it’s not precise. ESPECIALLY cookies. No two people measure a cup of flour the same. If you want to make absolute sure that your cookies turn out grab an inexpensive kitchen scale. It’s so much easier- you’ll never look back .
How to tell when Cookies are done baking?
They honestly wont look done- you’ll just notice they puffed up a lot. Follow the baking time and you’ll be golden.
