GF+ DF Cinnamon Roll Blondies
MAN oh man oh MAN. THESE ARE GOOOOOD.
Extremely extremely good. Picture a buttery soft and chewy perfect blondie base loaded up with cheesecake and the delicious buttery cinnamon roll filling swirled throughout the topping.
I’m in love with how they turned out! Absolutely in love. They just hit right in every possible way- and they also happen to be super easy to make!! They really do have a cinnamon roll vibe to them!!
I drizzled a little glaze on top of mine after baking them- just for fun since I do that to cinnamon rolls. Its totally optional though- they are plenty sweet without it.
Recipe tips & tricks:
Can you make them dairy free?
Yes, vegan butter works great & any brand of dairy free cream cheese.
Can you remove the eggs?
I wouldn’t. Brownies & Blondies are FINICKY and are by far one of the most challenging baked goods to make subs to.
Can you sub in king arthur baking gluten free cake mix? Maybe. Though there’s no guarantees it will work. If you do, look for a cake mix with the same amount of sugar and carbs per serving.
Can you sub in other flours? No. The cake mix has sugar, salt, vanilla, baking powder/soda & a blend of flours. I’m able to simplify the recipes down to 5 ingredients because of that. No flour alone will perform the same.
I include gram measurements. Why?
Gluten baking can be seriously hit or miss if it’s not precise. ESPECIALLY brownies & blondies. No two people measure a cup of flour the same. Grab an inexpensive kitchen scale. It’s so much easier- you’ll never look back .
Pillsbury gluten free cake mixes are the absolute best! Ive been so impressed with them. They bake up SO fluffy - so this yellow cake mix quickly became my go to when make short ingredient list cookies, brownies or blondies!
I have seen this mix on amazon & a bunch of grocery stores. But by far- the best price I have found is at walmart. I buy 4-6 boxes at a time. haha! Its great to have on hand if you want to make a quick impressive dessert to bring somewhere or if you have people coming over!
