Gf + Df Red Velvet Kiss Crinkles
How pretty are these cookies?? I just love the look of the red velvet cookie peaking through the powdered sugar with the kiss in the center.
I just recently stumbled across a crinkle & kiss cookie merger recipe & thought the idea was brilliant! So much so that I think we will be doing more flavor variations. Chocolate with “Hugs” or Cookies and cream kisses sounds fun to me :). Maybe a cute green peppermint variation too!
I had planned to wait to post these in early December but I had quite a few people point out that they also look like a great halloween cookie option. So I figured I would just go ahead and share them now. :) Why Not?
So, funny story. I adapted this recipe from another cookie recipe of mine.. and when I wrote out the recipe I was extremely tired and I forgot to write down the butter amount. So we proceeded forward and Marissa made the cookies without butter as written and they still turned out amazing. I didn’t even realize my mistake until I went to type up the recipe. So I guess these cookies are kind of fat free. haha. Totally unintentional, but still totally delicious. Next time we make them in another flavor we will be test out the butter to see what it does.
As is- the recipe is a wonderful balance of cakey with some chewiness. Throw in the kiss and youv’e got a delicious SUPER EASY to make well rounded cookie.
You will notice I listed these as Dairy Free.
We create dairy free kisses JUST for cookies this week too! You’ll find them right here in the club too. All they require is a little mold on amazon & any brand of dairy free chocolate. Easy peasy.
The cake mix is Dairy Free too. I had a few people message me saying they did not buy it because the box said it had dairy- and I sent then a photo of my box- and needless to say we were confused. We have come to the conclusion that pillsbury updated their mix recipe. Formerly it must have had dairy- but now it does not. Ive purchased easily 20 boxes of it. (No really. I have!) In cookie recipes it works exactly the same as gluten filled cookies. Ive figured out how to sub it in and have things turn out almost every time when Im creating something new. Plus as an added bonus it allows me to remove a whole bunch of ingredients from my recipe - and lower the ingredient count to just 4-6 ingredients every time.
Recipe tips & tricks:
Can you remove the eggs?
I woudn’t recommend it.. not unless you have the skills and time on your hands to try different things out.
Can you sub the king arthur baking gluten free cake mix or other cake mixes? MAYBE! Normally I would say no but I have found crinkles to be a pretty flexible and forgiving recipe so I feel like this is a safer recipe to experiment with.
Can you sub in other flours? No. The cake mix has sugar, salt, vanilla, baking powder/soda & a blend of flours. I’m able to simplify the recipes down to 5 ingredients because of that. No flour alone will perform the same.
I used gram measurements. Why?
Gluten baking can be seriously hit or miss if it’s not precise. ESPECIALLY cookies. No two people measure a cup of flour the same. If you want to make absolute sure that your cookies turn out grab an inexpensive kitchen scale. It’s so much easier- you’ll never look back .
How to tell when Cookies are done baking?
They honestly wont look done- you’ll just notice they puffed up a lot. Follow the baking time and you’ll be golden.
