This simple baked “fried” chicken recipe is a classic!! I shared a photo of it the other day on social media and was shocked to hear from so many that this recipe has been made on repeat - for a DECADE in their homes!! That blew my mind! I believe this recipe along with my extra crispy waffle recipe may be the two I am the most known for in my early days of blogging.
I felt it was time to bring this one back- with fresh photos! It deserved some love & to be shared here with club members. I updated and reworked the recipe just a little bit but kept it pretty close to its original form.
I drizzled on a bit of hot honey sauce that I made for my brand new Extreme Crunch Hot Honey Chicken over in the plus tier. (If you are a plus member or upgrade your account that link will work.) I adore this recipe as a great simple grain free baked fried chicken. The new extreme crunch recipe is not grain free- though it is gluten free and it is the star of the show. But this recipe holds a special spot too!! I hope many of you continue to make and enjoy it for years to come!!
The secret to this recipe turning out so awesome is the starch- egg free batter that I created! It was (and I still think is) a pretty innovative concept. I find that a lot of crispy chicken recipes don’t do a great job seasoning the chicken through every layer - most just have the breading flavored. But truly good crispy chicken has a salted meat, with a flavored batter to dip it in- and then a well seasoned breading layer! Then you get lots of flavor all the way through each bite.
Lets talk baking time:
I decreased the baking time for this recipe compared to the original version.
Since I posted it years ago I have learned the importance of not overcooking Chicken OR Beef. 5 minutes too long in the oven can take chicken from juicy as can be to dry!! Its a common mistake. People fear under cooking their chicken and then over cook it as a result. Finding that perfect spot right in the middle is where the magic happens.

This is a throwback recipe- widely loved and made for a decade in many homes! :) I made a few little updates & wanted to do fresh photos.
Ingredients
1 lb Chicken Thighs, cut into strips (chicken breast tenders can also be used)
1/4 Tsp Salt
Instructions
Wet Mixture
3 Tbsp hot sauce (I use Franks Original Hot Sauce)
4 Tbs Butter (Dairy or Nondairy)
1 Tbs Starch (Tapioca, Arrowroot or Potato Starch)
4 Tbs Milk (Dairy or Nondairy)
Dry breading mixture
3/4 Cup Tapioca Starch
3/4 Cup Blanched Almond Flour
1 Tsp Garlic Powder
3/4 Tsp Salt
1/2 Tsp Black Pepper
Preheat oven to 400 degrees. Line a baking sheet with parchment.
In a microwave safe bowl combine wet mixture ingredients and heat until thickened in the microwave (1minute or so) or on the stove top in a sauce pan. If using the microwave whisk liberally as soon as you remove the bowl. If using the sauce pan- whisk continually while it thickens.
In another bowl combine breading ingredients.
Drop chicken strips into wet mixture and then heavily dredge in breading mixture; place on foil lined baking sheet. Repeat until all chicken strips have been coated. Drizzle chicken with a little oil. (Do not double bread this chicken! It may result in the breading falling off in the oven.)
Place chicken in oven 23-27 minutes; chicken will be lightly golden brown and cooked through!
