Gluten Free Stewed Beef Beer & Bacon Potpie!
There are few things more comforting than slow cooked tender beef roast! Putting it into flaky pie crust with bacon and gluten-free beer takes things to a level that is hard to describe!!
Yes- this recipe takes some time. But I promise its well worth it. Much of the time is hands off- just occasionally stirring the pot gently simmering the beef. You could always make the filling and then assemble the pie the next day too.
Lets talk Pie Crust Options!
I have a number of them… and I also have a suggestion if you aren’t in the mood to make your own but need to stick to gluten free!

Nut Free Coconut Flour Pie Crust
Any of these recipes will work! The keto pie crust out of all of them is a little bit more difficult to work with (it can be crumbly).But I do think its still doable. Especially if you are willing to use some starch (tapioca,arrowroot, potato or cornstarch) to roll it out.
I wish that there were more gluten free pie crusts available in stores. Especially in a box (rather than pre-rolled). I have been really pleased with Wholly Gluten Free Frozen Pie crust shells every time I have used them. They turn out really nice and flaky! For this recipe you can let the pans thaw and then flip the crust out onto a sheet of parchment. I would just gather the dough into a ball and roll it out using a touch of gluten free all purpose flour or a little starch! If you go this route and want to make the recipe as I have it written you’ll need 2 pie tins total thawed.
With these delightful little pot pies you have several baking options!
If you want to split up the process of making these pot pies you can always make the crust several days in advance and store it in the fridge or even freeze it then thaw it when you want to use it.
The pot pies can be assembled and then wrapped up and stored in the fridge for a couple of days before you bake them!
You can also freeze them after assembly (before baking) and then bake them straight from the freezer & they turn out awesome.
OR of course you can assemble and bake them straight away! :)
STORAGE
Do not under any condition put these in the fridge. It will dry them out and that would be a tragedy. Store them room temperature in a sealed container or you can freeze them after they have baked.
Making Ahead
Can this be done? probably. I wouldn’t though. The baking powder is the most potent right after it gets mixed in.. the longer it sits the less power it has. Baking powder and soda begin to activate the moment they come into contact with any liquid (especially an acid). So its always best to get your baked goods right into the oven so that the baking soda/powder works it magic when you want it to.
You could prep your dry ingredients a day in advance if you wanted. But thats personally as far as I would take it. But, feel free to experiment. The truth is that I think the yeast does most of the work so putting them in the fridge overnight until you are ready to proof them might work. I just don’t know for sure as I have not tried it. I do suspect they might turn out a bit less fluffy.
Gluten Free Stewed Beef Beer & Bacon Pot Pie
Ingredients
- 4 Tbsp Butter (Regular or Dairy Free)
- 1 1/2 lbs Boneless Chuck Meat
- 2 Large White Onions
- 6 Cloves Fresh Minced Garlic
- 2 Cups Chopped Carrots
- 1 1/2 Tsp Garlic Powder
- 2 Tsp Thyme Leaves (Fresh or Dried)
- 1/2 Tsp Rosemary (Fresh or Dried)
- 1/2 Tsp Black Pepper
- 1/2 Tsp Salt
- 2 Tbsp King Arthur Measure for Measure Gluten Free Flour (Or other gluten free all purpose flour)
- 1 Tbsp Starch (Tapioca, Arrowroot, Cornstarch or Potato Starch)
- 12 oz Cooked, Drained and Chopped Bacon
- 1 Cup Water
- 3 cubes or 1 Tbsp Beef Bouillon
- 1 Tbsp Vinegar
- 12 Ounces of Gluten Free Beer
- 1 Batch Pie Crust (If you purchase store bought this will the equivalent of 2 rolled out crusts. If making the crust I recommend my Gluten Free Extra Flaky Patee Brisee Pie Crust OR my Gluten Free Pillsbury Copycat Pie Crust Recipe.
- Optional Egg Wash for the top of the crust: 1 Egg yolk + 2 Tsp Water whisked together OR Just Egg Vegan Egg Substitute.
Instructions
- Cook the bacon in a pan- place on a paper towel to drain excess fat and chop it. Set aside.
- Heat up butter in a large pot (heavy bottomed like a dutch oven works best.) over medium high heat for a few minutes. Pat the meat dry with a paper towel and then sear it in the hot butter for 4-5 minutes. Remove the meat from the pot and set aside.
- Turn the pot down to medium low and add the onions, carrots, & garlic and all of the spices and saute until the onions are translucent. Stir in the flour- Then add the meat back in and stir in all of the remaining pot pie ingredients (Including the cooked bacon). Place the lid on the pot and simmer on medium low for 2-3 hours stirring on occasion. You want the sauce to end up thickened into gravy and the meat should be tender.
- Turn off the heat and remove the lid allowing the pot pie filling to cool for 30 minutes or so! Preheat the oven to 400 degrees.
- Make your pie crust or start thawing it out if frozen! When the filling has cooled roll out half of the crust lining the bottom of a standard sized pie pan! Pour the filling over the crust. Then place a second crust on top. Pinching the edges together with a fork and poking a few holes on the top.
- Brush the top (optional) with the egg wash. Place into the oven on the middle rack and bake 35-40 minutes or until the crust is perfectly golden. *You can also assembled the pie and cover it with ceran wrap and place it in the fridge for up to 2 days before baking OR freeze it before baking it. If you bake it from frozen the time In the oven may be just a little bit longer (by 10 minutes potentially).
