Gluten & Grain Free Soft & Fluffy Breadsticks!

My goal with this recipe was to mimic the texture of Olive Gardens famous breadsticks! I ended up getting decently close while sticking to the use of only gluten and grain free ingredients!

They are quite soft & really great for dipping into olive oil or the sauce of your choice.

If you really want to take them to the next level I highly recommend sauteing minced garlic in butter until its lightly golden brown. Do this over medium low heat so that you do not burn the butter or the garlic. Then sprinkle in some salt & pepper. This could be brushed on the rolls before and after they bake!

Grain Free Garlic Breadsticks!

Who doesn’t love soft garlicky breadsticks? Dip these guys in marinara sauce and serve them with zucchini noodles. Paleo at its best!

Ingredients

  • 4 large egg whites
  • 132 grams tapioca starch (about 1 cup), plus more for the work surface
  • 108 grams blanched almond flour (about 3⁄4 cup)
  • 2 teaspoons double-acting, aluminum- free baking powder
  • 1 teaspoon xanthan gum or guar gum
  • 1 1⁄ 4 teaspoons garlic powder
  • 1⁄ 2 teaspoon onion powder
  • 1⁄ 4 teaspoon kosher salt
  • 48 grams Spectrum vegetable shortening (about 1⁄4 cup)
  • 1 tablespoon water
  • 1 tablespoon apple cider vinegar
  • Olive oil, for brushing the breadsticks

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In the bowl of a stand mixer, using the whisk attachment, whip the egg whites until frothy.
  3. In a separate bowl, whisk the tapioca starch, almond flour, baking powder, xanthan gum, garlic powder, onion powder, and salt until well blended.
  4. Add the dry ingredients to the egg whites and mix on medium-high speed until a dough forms. Add the shortening, water, and vinegar and mix until combined.
  5. Dust your work surface and your hands with tapioca starch. Shape the dough into 4 equal portions and, using your palms, roll each portion into a cylinder about 6 inches long and 1 inch in diameter. Place the breadsticks on the prepared baking sheet and brush them with olive oil.
  6. Bake for 25 minutes or until golden brown.
