Pumpkin Spice Chewy Chocolate Chip Cookies
These are the easiest chocolate chip cookies you will ever make (no chilling the dough required) and yet also some of the best you'll ever make at the same time. As a bonus they are both Gluten Free & Vegan!!
Most pumpkin chocolate chip cookies floating around online are super fluffy & cake like. Which is fine of course- but my goal here was to nail down a cookie with the texture of a classic chewy chocolate chip cookie with delicious pumpkin flavor added. I nailed this recipe & am extremely proud of how they turned out. I have a large variety of chocolate chip cookies in the club- but these may be my favorite!
Both kids and adults love this recipe. I highly recommend giving it a go this fall.
The amount that your butter is softened will effect how much the cookies spread just a bit. Just softened = perfect spread. Somewhat melted= more of a spread but still delicious. For example sometimes on a warm day I notice that my second tray of cookies spreads a bit more than the first since that dough has sat at room temperature longer!
If you chill the dough- the cookies may not spread as much as they should. So IF you absolutely need to make this dough in advance YES you can store it in the fridge covered but I do suggest scooping the cookies and letting the dough sit out at room temperature on the pans for an hour.

Butter:
I recommend either Salted Butter OR Earth Balance Buttery Sticks. Not all vegan butters are created equal and some don’t even come close to matching the melting point of real butter. This effects how much the cookie spread- causing too much spread or not enough. From my experience earth balance buttery sticks mimic real butter the closest!
King Arthur Gluten Free Measure for Measure Flour
This flour is wonderful for muffins, scones, pancakes and cookies! Its really affordable and can be found in most grocery stores these days. I normally just order it on amazon.
Using other gluten free all purpose flour blends
The bad news is that there isn’t truly a gluten free measure for measure flour or cup for cup. Its a marketing ploy. There are blends that work decent in place but never exactly. Each and every blend is totally different. For example I LOVE better batter (and lovingly refer to it as a gluten free bread flour!) - but in this recipe it would make for cookies that do not spread.. I chose King Arthur as its lower in gum and therefore I knew my cookies would end up with the perfect texture.
So of course you are welcome to experiment. But please keep in mind that there are no guarantees. Any change means the recipe will change. I opted to use King Arthur as I think its the easiest gluten free flour blend to come by these days (including outside of the US!)
