Gluten Free French toast w/ Eggs or Vegan option!
I have been making French toast for Years. REALLY good French toast at that and for some reason I never wrote down the recipe. It was one of those things I just threw together without measurements and it turned out perfect every time! It was long overdue that I got it on paper and shared here in the club.
I wanted to challenge myself and create an indulgent yet SIMPLE French toast recipe that could work for both egg eaters and the vegans! With a bit of trial and error I was able to nail down ONE recipe that could go in either direction. The best part?? Both versions taste pretty much exactly the same. Its wild!!
When it comes to vegan recipes I prefer keep the ingredients simple. Im able to work my way around needing egg replacers most of the time. That was the case in this recipe- all you need is a few tbsp of gluten free King Arthur measure for measure flour! :)

You can honestly use just about any kind of bread! French toast classically is Made with fluffy Brioche! I DO have delicious brioche right here in the club that would be absolutely wonderful in this recipe. But, if you want to keep it really simple and just use a store bought bread (gluten free or not) go for it. French toast in my opinion tastes great with bread point blank. :)
You could even use a keto bread with a sugar free sweetener in the French toast batter! The recipe is highly adaptable.
The key to it turning out perfect every single time- is not rushing the cooking process. Especially if you use eggs. The ingredients can burn quickly if the heat it too high. I like to keep my heat right around 2-3 (out of 10) and give each side 1-2 minuets. If it browns quicker than that turn down your heat a little!
With the vegan /egg free version you just need to cook long enough that the batter soaks in/ cooks so the bread isn’t soggy!

My current favorite brand of dairy free heavy cream is silk! Its becoming increasingly available and works lovely in this recipe. They also sell a dairy free half and half which could be used for the full quantity of milk & cream! (1cup total) . Another option to replace the cream portion is to use full fat creamy coconut milk from a can!
As for the milk you can use ANY dairy free milk OR 2%,whole milk or low fat!
